Dinkelbrot- Slowly arriving in Germany.

It's called FALLER Bread Boutique and they grind their organic grains fresh the night before baking the goods in the morning! I have never heard of a commercial bakery actually doing that and ensuring rancid free flour. The wholemeal sourdough spelt breads MUST be good for ones health, right? Besides the variety of breads are out of this world. Real dark and rustic, heavy and filling, tasty too, but you've got to chew well. Some of the German businesses that are still practicing traditional techniques of manufacturing appear to not have their websites jazzed up, so you won't find them all over the net.
