2) Avocado and Zucchini Dill Dip- This recipe is so quick, so easy and so tasty! Just imagine what it could accompany... Recipe below.

Avocado and Zucchini Dill Dip



1 zucchini chopped

2 large ripe avocados

Juice of 1/2-1 lemon- depends on juiciness, taste test for the right amount of zing

1/4 cup chopped fresh dill 

2 tbsp olive oil

Tiny pinch of cayenne pepper

Sea salt 

Optional: 1 clove garlic chopped finely


Blend everything and taste test for that exciting this is so delicious effect. Enough salt and lemon juice are crucial, however be aware of adding too much too soon. This dip is wonderful with fritters, or burgers, or for a light summer snack serve on cos lettuce dipping boats.

3 ) Almond Pulp Cookies with Coconut and Cranberries- This recipe is handy if you make your own almond milk and have that abundance of almond pulp collecting in your freezer.

Almond Pulp Cookies with Coconut and Cranberries


1 cup fresh almond pulp left over from making sexy almond milk

2 tbsp flaxseeds ground

1/2 tsp vanilla seeds

A tiny pinch of salt

1/2 cup shredded coconut

1 tbsp cranberries apple juice sweetened

6 medjool dates

1 tbsp coconut oil

Optional: 1/4 cup chopped walnuts or pecans

Optional: 1 tsp cinnamon or nutmeg OR Lime rind


Mix everything either by hand, massaging love into the mix, or use a food processor, still adding that love. Bake or dehydrate until dry or browned a little. Perhaps start with 160C for 30 minutes. Yum, these are really healthy in my opinion, so if you are going to serve them at a picnic perhaps dip them in melted raw chocolate first!
